Full job description
Passionate junior sous chef and line chef hybrid needed at Clay Cafe @ Maggies Farm, Lanseria to join our creative team. As one of our team members, you will be responsible for your work station, will need to prepare food to order, be able to work in different sections in the kitchen (includes but is not limited to breakfast service, sandwiches and salad bar and pizza bar), be able to plan and prep ahead of time, be a good team player and help to manage the kitchen alongside the executive chef.
We need a candidate that is creative and passionate about culinary art, someone who can deliver the highest quality service possible and someone who is diverse in their skills as a chef.
Duties and Responsibilities:
- Assist the executive chef
- Ensure food is prepared, portioned, garnished and presented according to the executive chef’s standards
- Swing between breakfast service, sandwich and salad bar and pizza bar.
- Manage and own your work station
- Apply food safety and sanitation procedures
- Ensure that all plates of food are of top quality and that the kitchen is in good condition
- Plan for following day of service
- Knowledgeable on cooking chemistry and the ability to apply culinary techniques.
- Manage wastage in the kitchen
- Ensure consistency and high-quality standards are kept and maintained in the kitchen at all times.
- Stock take and inventory control
- Assist with ordering and receiving ingredients
- Help manage food costs and portion sizes
- Supervise kitchen when executive chef is not present
- Help solve problems that arise
- Work in a timely manner
Requirements:
- Grade 12
- Culinary degree/diploma
- Proven experience as a chef (at least 3 years)
- Experience leading a kitchen (at least 1 year)
- Work in a high-stress environment
- Great communication skills
- Expected to work weekends and public holidays
